Shrikhand
Yohurt Cream Cheese (Dehin) with sugar
PREPARATION AND COOKING TIME:
YIELD:
- 6 cups plain yogurt in two layers of cheesecloth and allow to drain 8-12 hours until no more whey appears;
- Whisk with 1/2-1 cup powdered sugar.
Optional combinations of:
- 1/4 tsp powdered saffron or 5-6 saffron strands soaked in rose-water.
- 1/4 tsp ground cardamom (Velchi/elaichi).
- 2-4 tblsp of crushed pistachio nuts.
- 1/4 tsp ground nutmeg (Jaiphal).
- Mixed fruit salad.
- Top with fruit jam syrup.
