Khara Gajar Burfi
Carrot Milk Fudge
PREPARATION AND COOKING TIME:
YIELD:
- Heat 2 tbsp ghee in saucepan;
- Add and sauté for 2-3 minutes:
- 2 grated carrots;
- 1 tsp ground cardamom;
- 1 tsp freshly grated nutmeg;
- Add and boil for approx. 8 mins:
- 1 cup water;
- 1/2 cup sugar;
- Remove from heat and cool for 10 mins;
- Fold in and cook over moderate heat for 4 mins:
- 1/2 tbls ghee;
- 1 2/3 cups powdered milk;
- When thick stir in 1/2 tbsp ghee;
- Pour into pan and refrigerate.
