Jam

PREPARATION AND COOKING TIME: 30 mins
YIELD: 1 lb

Strawberry

• Boil 1 lb (punnet) washed quartered strawberries with:
  • 1 cup sugar;
  • 1/2 lemon;
• Test for set after 25 mins;
• Skim off froth;
• Pour into 1 lb jar.

Raspberry

PREPARATION AND COOKING TIME: 30 mins
YIELD: 1 lb

• Boil 1 lb (approx 2/12 cups) washed rasberries with:
  • 1 1/2 cups sugar;
  • 1/2 lemon.
• Test for set after 25 mins.

Raspberry and Pineapple

• 2 cups rasberries;
• 1 cup pineapple;
• 1 1/2 cups sugar;
• 1/2lemon.

To test for set place a few drops of jam on a plate. Place the plate in the refrigerator for one minute. Run finger through the jam and if the jam runs back together again cook for some more time.

Pectin need some acid, provided by the lemon in order to set the jam.
