Halva
PREPARATION AND COOKING TIME: 30 mins.
YIELD: 5 sevings
- Boil covered for a few minutes:
- 2 1/4 cups water/milk (or whey or half water/half milk);
- 1 cup sugar;
- 3 x 1/2 in strip of orange zest if using water;
- Remove orange before adding to farina;
- Slowly cook whilst stiring on medium heat for 10 mins (lower heat for longer time = lighter colour):
- 1 stick (1/4 lb) butter (lightly salted or unsalted) or 1/2 cup ghee;
- 1 cup farina (fine semolina - pasta flour);
- 1/4 tsp ea freshly ground:
- 8 cloves;
- 1 tsp ground cardamon seeds (12 pods);
- 1/2 way through cooking optionally add:
- 1/4 cup nuts/coconut;
- 1/8 cup currants/raisins;
- Slowly add the boiling water/sugar mixture to the farina;
- Turn the flame back up to medium, and stir until thick (10 min);
- Cover and cook very slowly for 5 mins;
- Turn off heat and leave covered for 10 minutes;
- Garnish with slivered toasted almonds;
- Serve while still warm.
