Dried Fruit Dessert
SOAKING TIME: overnight
PREPARATION TIME: 10 minutes
COOKING TIME: 11/2 to 2 hours
YIELD: 10 portions
All measurements are for unsoaked fruit.
- Cover with approx. 5 cups water and soak overnight:
- 1 cup dried prunes;
- 1 cup raisins;
- 1 cup whole dried apricots;
- 1/4 cup sultanas;
- 1/4 cup currants;
- 1/4 cup candied orange peel;
- 4 dried figs, chopped;
- Simmer with 1 cup sugar for 1 hour over low heat;
- Add 1 cup chopped mixed nuts;
- Simmer for a further 1/2 - 1 hour;
- Refrigerate;
- Serve with a topping of light cream and garnish of grated nutmeg.
